Research Progress of Structure Modification of Grain and Oil Plant Protein by Cold Plasma

Grain and oil plant protein has the advantages of sustainable source, low economic cost and health benefits, however, its low functionality limits its application in food, packaging and pharmaceutical industries. Scientific and effective methods are needed to modify plant protein in order to broaden its application fields. As a new non - toxic and non - thermal physical modification technology, cold plasma has a good development prospect in the modification of plant protein. In this paper, the mechanism of protein modified by cold plasma, and the influence of cold plasma technology on the structural characteristics of protein were systematically summarized. The application prospect of cold plasma technology in plant protein modification was also prospected.
