Functional foods in an emerging market

Emerging markets with intermediate but increasing consumer sophistication and disposable income present opportunities for manufacturers of functional foods, notably those containing antioxidants, high fibre, prebiotics and soy proteins. Experience in South Africa with a high protein fortified breakfast cereal based on maize and soy is reported.
